Feijoa Walnut Streusel Muffins



Salam to all,

A few months back I blogged abt my wisdom tooth that needs to be pulled out.  It was giving me an excruciating pain a few days back and I finally plucked enough courage to go and see the dentist :pp  Yeah it took me ages to finally made and appointment and get my *toot* to the dentist.  A very long delay on my part and I was told by Mr Dentist that my gum was too swollen and there was an infection thus he cant pull the tooth out :(  Haiizzz I was given some antibiotics and the only day available for me to go back and see my dentist again is next Tuesday.  May Allah bless me with whatever I have to go through next Tuesday......uwaaaaa!!!!  That's why I have been missing in action.....no mood :( cant even chew my food properly!!  Such an agony....why!!???




Anyway I baked this muffins for my guests today.  Kak Junn, Abg Arun, Zue & cutie Irfan came over as they were near my house collecting an item that they bought online. Thank you for coming over my humble abode ;)  It really was a great afternnoon.

We were given a big bag of feijoas by one of hb's work mate and we cant finish them.  As the feijoas have short shelf life, some were almost rotten and so, I shared them with the cow and sheeps hehehez.  Decided to whip up these muffins as I dont want the left over feijoas to go to waste.  Still have a few more feijoas left, if I am not suffering from this agony I probably would have them with ICE CREAM nyehahahhaz.  My choice is either french vanilla or strawberry flavoured.  Drizzled with chocolate sauce and topped with lots of chopped nuts or honey roasted peanuts.  Drooollzzz...........




I used Rima's no fail banana muffin recipe and substituted the bananas with feijoas of course.  As for the walnut and streusel topping....I got the idea from Happy Homebaker's Banana Walnut Streusel Pound Cake.  That pound cake sure looks yummeehhh!!  I am so gonna bake that pound cake one day.  Got to wait until my tooth is pulled out first of course.  I did have half of this yummy muffin earlier....it was really so soft and the streusel topping and walnuts were so crunchy making this muffin really2 yummzz.  Don't believe me??  You can ask my guests hehehez :ppp




Muffins Recipe Adapted From : Rima @ Bisousatoi
Struesel Recipe Adapted From : Happy HomeBaker

Ingredients
1 1/4 cup all purpose flour
1tsp baking soda
pinch of salt
1 cup sugar
1/2 cup of oil ( I used canola oil)
2eggs
1 cup mashed banana (I substituted with feijoa)
1tsp vanilla

50g walnuts

Streusel:
25g unsalted butter, room temperature
25g icing sugar, sieve
25g cake flour

Method
To make streusel, place butter, icing sugar and cake flour in a bowl. With a fork, mix together the ingredients to form a soft dough. Leave in the fridge to chill.
Break walnuts into pieces, place in a baking tray and toast it in a preheated oven at 100degC for 10mins. Set aside to cool.
Mix flour, baking soda and salt
Whisk sugar, oil and eggs until smooth. Add banana and vanilla, beating well. Add flour mixture and beat until well combine.
Sprinkle the walnut pieces on top. Lightly press into the batter with spatula.
Remove chilled streusel dough from fridge. Grate the dough over the top of the batter. Work quickly as the dough will soften very fast (especially on hot days).
Bake at 180C for abt 25mins.

Buttermilk Chocolate Muffins


Salam to all,

I really didn't plan to bake anything at all today.  We skipped lunch and was feeling very hungry at abt 4.30pm.  We had an easy dinner of fish and chips at abt 5 pm just now.  It's such a lazy day for us today as its last day of hb's off day.  Actually, it wasnt really lazy for me bcos I had to iron 3 sets of hb's uniform huhuhu :ppp We were watching 'Kingdom of Heaven' on cable tv while having our dinner.  It was the first movie me and hb watched when I first migrated to NZ.  I've totally forgotten abt the story line of this movie.  After clean up, we continued watching the movie and it ended abt 7pm ish.

At abt 7.30pm I told hb that I felt a little peckish ahakkksss.  Hb said it's bcos we didnt have any pudding after dinner thats why....doh!!  Opened up the pantry, no munchies for us.  There's roasted peanuts and chocolate bar but we are just sick of them.  Neither me nor hb wants to drive to the supermarket to get our usual dosage of potato chips and.......so, I baked these muffins.  I couldn't think of anything else that can be baked quickly before Jannah's bedtime.  They were ready by abt 8.20pm and I was so hoping that there'll still be a little daylight for me to photo these muffins.  As soon as they come out of the oven, I quickly remove them from the muffin tray using my incredible heat proof fingers and quickly took photo of them.  Oh well, I managed to get a few shots but I gave up after the camera's flash keeps on popping. 

On a positive note....I managed to bake them and clean up in less than an hour.  Also, I can pop a few of these into hb's lunch box tomorrow ;)  Ohhhh by the way....they are so yummy, we had the muffins while they were still warm.   Hb had 2 pieces with a cuppa coffee, Jannah had 1 with a cuppa milk and I had 1 with a cuppa plain icy cold water........

Ingredients
100g unsalted butter
125g dark cooking chocolate - I used 64% Callebaut chocolate
100ml buttermilk
2 eggs - whisk lightly with a fork
175g all purpose flour
15g cocoa powder - I used Valrhona
1 tsp baking powder
1 tsp baking soda
50g light brown sugar
50g caster sugar
1/2 tsp salt
100g black cherry - I used chocolate chips




Method
Melt butter and pour into dark chocolate - set aside to warmish
Add buttermilk to ur butter/chocolate mixture and continue to stir.. add whisked eggs and stir again - set aside
In a big bowl, sift flour, baking powder, baking soda and cocoa powder.. add brown sugar, caster sugar and salt to ur flour... mix
Once mixed add ur "wet" (butter/chocolate) mixture into ur "dry" ingredients
Stir it lightly - DO NOT OVERMIX
Pour batter into ur fav muffin cups
Bake in a preheated oven of 175C for 20mins
Serve warm!

Greeting everyone with Banana Crumble Muffins......

Salam to all.....

I have been away for too long :(  I knooowww.  First it was the camera then by the time I got the camera replaced...I was busy preparing for Hari Raya's cookies order.  After that I went back to Singapore for a long retreat for almost 3 months with Jannah.  And then I was still  in holiday mood bcos my BFF came back to NZ with me for a short holiday.  Excuses.....excuses *gulps*

I have never forgotten abt this blog, blogger friends and blog walking and been checking out yummilicious recipes all the time.  Thank you to all that still pops into my blog, leaving foot prints and comments.  Right now, I am still getting the hang of re-blogging again hehehez.  The first thing that I wanted to do is renovate this ugly blog :pppp 

Saw this banana crumble muffins at Rima's blog yesterday and couldnt resist it.  Baked them and they turned out so perfect and delicious.....

Ingredients
1 1/2 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas mashed
1 egg lightly beaten
1/3 cup melted butter
3/4 cup sugar

Topping
1/3 cup packed brown sugar
2 tbsp flour
1 tbsp butter - cubed
1/8 tsp cinnamon


Method

1. Preheat oven to 180C. Lightly grease 12 muffin cups, or line with muffin papers.
2. In a large bowl, mix together 1 1/2 c flour, baking soda, baking powder, and salt. In another bowl, beat together bananas, sugar, egg, and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3. In a small bowl, mix together brown sugar, 2 tbsp flour and cinnamon. Cut in 1 tbsp butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4. Bake in preheated oven for 18 - 20 min. until a toothpick inserted into center of a muffin comes out clean.

Merry Xmas & Happy Holidays to all that are celebrating this joyful day ;) happy opening up all the prezzies...wooo hooo!!

Thought I should do something with the blueberries that I picked the other day.  Cost per kg for pick your own blueberries was $8.50.  I picked slightly more than a kg and only paid $8.80 for them.  They cost $3.20 per punnet at the supermarket and only weighs 200gm if I'm not wrong.

Its been a while, since I last made pancakes.  I decided to give these little beautie's recipe a try when I saw them at bakerella.com. It's true when she said that this product needs to be renamed to something shorter....hahahaz.  I also like it when she said that its a cross between a pancake and muffin...they are puffins.  Its also labour less, don't have to slave in front of the stove and keep on flipping pancakes...hehehz.  One thing for sure, we all enjoyed this yummy puffins.

I simply love all the cake pops that she created, they are too cute to be eaten!!  She's certainly one talented lady :) when I grow up, I want to be just like Bakerella......hahahahaz XD




These are the chocolate chippies puffins....



I slightly over filled the pan for the blueberry ones.  They are not as cute as the choc chippies......

Generously grease a 24 cup mini muffin pan with non-stick spray.
Mini Maple Chocolate Chip Pancake Muffins.
(Someone please come up with a shorter name for these.)
 
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar (I only added 1 tblsp)

2/3 cup buttermilk
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup milk chocolate chips
Blueberries - optional
  • Preheat oven to 350 degrees F / 176.67 degrees C. (I baked mine at 160 degrees C)
  • Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together.
  • In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
  • Add wet ingredients to dry ingredients and stir with a spoon until combined.
  • Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
  • Bake for 8-9 minutes.

Speedy Chocolate Muffins

Salam, Kia Ora....

Drove to the servo station with quarter of a tank gas in the car yesterday and was shocked to see the petrol prices!!! Unleaded 91 - $1.96 & Unleaded 95 - $2.03 :( yikeesss petrol prices have hit over $2. I pumped $40 worth of petrol and the fuel needle didn't even touch the 3/4 mark. All food prices have gone up, even GST has risen to 15% a few months back. Haiizzz....the only thing that hasn't gone up is hb's pay.

Anyway, this is the other type of muffins that I brought to Auntie Eton's house last Tuesday.  The name of the muffins really suits the last minute invitation...hahahaz. It's so easy to prepare and only requires 1 bowl, a fork and a spoon. I should also call this muffins, 1 bowl wonder muffins. Of course u gonna need a sift, measuring spoons and muffins mould. Otherwise, don't have lots to wash after baking.....I like :p

Ingredients :
 - 250g self-raising flour - I used standard flour and added 2 tsp double action baking powder & 1/2 tsp salt and sift them together before adding to mixture.
- 25g cocoa powder
- 2tsp baking powder - I did not add this since I've already added to the flour.
- 175g caster sugar (or 125g caster sugar and 50g muscovado sugar) - I only added 125g caster sugar.
- 175ml milk
- 2 large eggs, beaten
- 100ml sunflower oil - I used melted butter
- 75g plain chocolate chunks - I used chocolate chips
- 1-2tsp vanilla extract

Method :
Preheat the oven to 170ºC (375ºF, gas mark 5).
Line a 12-hole deep muffin tray with paper muffin cases.
Sift together the flour, cocoa and baking powder; stir in the sugar. Add the remaining ingredients and mix lightly together.
Spoon the mixture into the prepared cases. Bake for approximately 20 mins or until golden and springy to the touch. Cool for 10 mins; transfer to a wire rack and leave until cold. (I baked mine at 150ºC for 25 mins)

Note : I sprinkled some chocolate chips on the muffins before baking them :)

Salam, Kia Ora...

Oh me, oh my today the weather forecast stated 26 degrees C as its high today but right now the temperature has hit 33 degrees C.  Can't believe all this forecasters aye? hehehez.  Aiyayyay, its so freaking hot right now.  Even though I have the fan turned on, it feels like the fan is circulating hot air.

I managed to have my afternoon nap, maybe for an hour or so.  I could hear Jannah shouting, screaming and dancing copying the antics of the child presenter on telly.  She didn't bother me and I continued to sleep every time I got woken up by her ZZZzzzz....hehehez.  Finally, I woke up because the afternoon heat is making me uncomfortable to continue with my beauty sleep.  Thank you for letting mama sleep, Jannah buggy ;)

Anyway, enough of my complains, I baked 2 types of muffins yesterday.  Only made 1 batch of these coffee walnut muffins and got 7 pieces.  I didn't want to make too many of these as I wasn't sure if the kids were gonna like the coffee flavoured muffins.  The other type of muffin that I baked was chocolate chip muffins, I will share the recipe in my next entry......hehehez ;)

Ingredients (makes 6 regular muffins):
  • 60ml fresh milk
  • 2 tbsp hazelnut flavour instant coffee (I used normal instant coffee)
  • 60g butter, soften
  • 50g fine granulated sugar
  • 1 egg
  • 150g cake flour, sift together with baking powder (I used standard flour)
  • 1½ tsp baking powder
  • Almond slices (I used walnut pieces)

Methods:
  1. Heat up milk lightly and dissolve instant coffee in milk. Set aside and allow to cool.
  2. Preheat oven at 180ºC.
  3. Whisk butter until creamy, add in sugar and continue to whisk until light and fluffy.
  4. Add in egg and whisk until well combine.
  5. Fold in sifted flour in batches, alternate with coffee milk.
  6. Transfer batter into muffin cases and sprinkle almond slices (walnut pieces) over the surfaces.
  7. Turn oven down to 175ºC and bake for 20-25 minutes. Cool on rack. (I baked mine at 160ºC for 20 mins)
Still haven't got a clue on what to cook for tonight's dinner.  Might just cook a simple fried rice dish as its way too hot to be slaving in front of the hot stove.

No-Fail Banana Muffin & Jason's 10th Birthday

I'm back again...hehehez :D  I don't know why I felt so tired the past 2 days.  It wasn't even me who hosted the BBQ and the birthday party...LOL!!  Yesterday, I only decided to make these muffins at abt 11am when I asked hb what time we should be at the party.  He said that we should be there no later than 2pm.

At first I thought of making spring rolls but I just couldn't be bothered to peel the potatoes and then cook them.  After that, I have to roll the spring rolls and fry them...the weather is just too hot to be slaving in the kitchen...hehehez.  I found this recipe at Rima's blog while I was cracking my head on what to bring to the party.  This recipe is really very easy, peasy, japanesy and it only took me abt an hr from the start of preparation to baking these little beauties.  Pssssttt : I had to return the plate to its owner thats why...hehehez and I don't feel good returning an empty plate.

I wanted to sprinkle the top of the muffins with chocolate chips but to my dismay :( there wasn't any chocolate chips left in the pantry.  Hmmmzzz that was very strange bcos I'm sure I do stock them up...wonders if there was any black headed mouse that has been nibbling them......I shall investigate...hahahaz :D  Since I haven't solved the mystery, I sprinkled the muffin's top with almond flakes instead.

  • 1 cup sugar (I only used 3/4 cup)
  • 1/2 cup canola/corn oil (I used melted butter)
  • 2 eggs
  • 1 cup mashed banana
  • 1 tsp vanilla
Method :
  • Mix flour, baking soda and salt.
  • Whisk sugar, oil and eggs until smooth.  Add banana and vanilla, beating well.
  • Add flour mixture and beat until well combined.
  • Bake at 180 deg C for 25 mins. (I baked them at 160 deg C for 25 mins)
Yields : 10 pcs for big cupcake casings or 18 pcs for smaller casings.  (I got 11 pieces)



1 thing that I've realised abt Kiwi kids and even adults....if it ain't sloppily iced with thick icing, it won't be a big hit....hehehez.  I'm the opposite of them, I lurve this muffin....its really soft and moist. 



Jason's cake was iced & decorated by Jessie, his sister, who is only 14 yrs old.  She is really talented and I'm sure she will only get better.  Wonders why there's too many candles though...hahahaz.  Kiwi kids having fun at their own backyard...don't need to spend money to enjoy water sliding....;)

I hope everyone enjoyed their weekend just like I did with mine.  Guess what we had for dinner tonight??  No prizes for guessing the right answer thou...hehehez.  Will share it with everyone tomorrow ;p.
