Mee Rebus



Salam to all,

Last Friday I had a chat with my bestie in Singapore via Skype.  A week before she was hospitalised due to pneumonia.  She has recovered but was still on hospitalisation leave until today.  She told me how the hospital food sucks hehehez.  She was served plain porridge with tasteless dishes for lunch and dinner.  For breakfast, she had quaker oats.  What do u expect bestie??  You were on diabetic diet weren't you ;)  Story goes that she ordered mee rebus on her last day, before she checked out and described to me how wonderful and yummilicious the mee rebus was.....hmmmzzz.

It was almost bed time when I finished skyping with her and I was tossing and turning in bed thinking of mee rebus hehehez.  I've never cooked mee rebus before but it certainly was one of my favourite street delicacies back home ;) yummz yummz.  Since I cant sleep....I googled for recipes and chose this one since my pantry was running low and it needed to be stuffed with groceries badly.  I havent had the chance to do groceries bcos hb needed the car for work :(

Woke up the next morning....not really early around 8am hehehez.  Was still thinking if I should start my mee rebus project.  The morning is getting cold nowadays making it a tiny little bit hard to get out of bed.  When Jannah jumps in the bed with me and I asked her if she wanted mee rebus....she quickly answered YES!!  I had no choice but to satisfy my cravings hehehehez.  It was really worth it......this recipe is certainly a keeper.

BAHAN-BAHANNYA :-)
1 kg mee kuning
150 g taugeh, buang ekor
2 keping tauhu, goreng terendam, hiris nipis
2 biji cili hijau, hiris
1 biji cili merah, hiris
1 pokok daun sup, hiris
1 pokok daun bawang, hiris
4- 5 biji telur rebus, kupas dan belah 2
6 biji limau kasturi, belah 2
Bawang goreng secukupnya
Kuah mee rebus*

INGREDIENTS :
Yellow Noodles
Mung Bean Sprout
Hard Tofu - Deep Fried & Sliced
Green Chillies
Red Chillies
Chinese Celery
Spring Onions
Hard Boiled Eggs
Calamansi Limes (I used limes can’t find calamansi here)
Fried Shallots
Mee Rebus Gravy*
(I didn’t specify quantity here…..it’s really up to u ;)

BAHAN KUAH MEE REBUS* :-)
1/4 cawan minyak masak
2 camca besar rempah kari daging
2 1/2 camca besar tauco, tumbuk lumat
500 g daging lembu (sedap yang ada lemak sikit)
5 - 6 cawan air
500 g keledek
1 cm lengkuas, dititik
1/3 cawan kacang tanah, goreng tanpa minyak dan kisar halus
1 biji tomato, belah 4
7 biji bawang merah kecil*
3 ulas bawang putih*
1 cm halia*(*tumbuk halus)
Garam dan gula secukup rasa

MEE REBUS GRAVY INGREDIENTS* :
¼ Cup Canola Oil
2 tblsp Meat Curry Powder
2 ½ tblsp Fermented Soya Beans* (I washed & drained them)
500gm Beef
5-6 Cups Water
500gm Sweet Potatoes (I only had a 350gm sweet potato and added potatoes to make up to 500gm)*
1cm Galangal - Bruised (I substituted with 1 lemon grass)
1/3 Cup dry roasted peanuts (I substituted with roasted cashews)*
1 Tomato - Cut into four (I did not add)
7 Shallots (I used 2 medium brown onions)*
3 Cloves Garlic*
1 cm Ginger*
Salt & Sugar To Taste
1 Ikan Bilis Cube - I added.



Easy peasy fried chicken.....no specific measurements though.  Cumin, coriander, chilli, turmeric (all in powder form),  finely chopped garlic, salt, pepper and ground rice flour.  Deep fried in hot canola oil. 



CARA MEMBUATNYA :-)
UNTUK KUAH MEE REBUS :- 
Daging dihiris nipis dan rebus hingga lembut (kalau guna daging batang pinang tak perlu rebus dulu). Keledek direbus hingga lembut dan kisar halus. Panaskan minyak, tumis bahan tumbuk halus hingga harum, tambah taucho dan rempah kari, kacau rata. Tambah sedikit air jika perlu. Masukkan daging (kalau daging rebus, masukkan sekali air rebusannya), air, keledek dan lengkuas. Masak perlahan selama 20 minit. Tambah kacang tanah kisar dan tomato, perasakan dengan garam dan gula. Masak hingga kuah pekat. (selalunya kuah mee rebus perlu manis sedikit).
PENYEDIAAN MEE REBUS :-
Celur mee dan taugeh mengikut kuantiti yang diperlukan. Letak dalam bekas sesuai. Kacau kuah dan tuang atas mee. Letak telur rebus dan taburkan cili hijau/merah, tauhu, hirisan daun sup/daun bawang, bawang goreng dan diakhiri dengan perahan jus limau kasturi. Hidangkan segera.

Method : (I did my way instead)
Slice beef thinly and boil until tender.  Do not discard the beef stock.
Boil sweet potatoes/potatoes until tender.
Blend all the (*) ingredients until fine.
Heat oil in a pot.
Fry all the blended ingredients, curry powder until fragrant.
Add beef, beef stock, water, lemon grass and ikan bilis cube.
Simmer on low heat for abt 20 mins to thicken the gravy.
Season with salt & sugar.

To Assemble Mee Rebus :
Blanch yellow noodles & mung bean sprouts in hot water for 30 secs.
Place noodles and bean sprouts in a bowl.
Pour the gravy on top of the noodles and bean sprouts.  Garnish with chillies, eggs, chinese celery, spring onions and shallots.  A squeezed of lime and its ready to be served immediately ;)



I completed my mee rebus with bagedil & fried chicken!!  PBG!!  The chillies were freshly harvested from the garden and they were so crunchy.  Burrrpppsss.....excuse me, alhamdullilah hehehehez.  Have a great week u all.......TTFN ;)

Roti Kirai (Lacy Pancake), Curry & Rice - An everyday request


Salam to all,

Hello weekend ;)  Heard that it has been raining heaps in Malaysia & Singapore.  It was raining quite heavily here yesterday also.  Hb was off yesterday but we didn't go anywhere due to the rain.  I simply luv the rain.  Rain equals to NO hay fever for me....yeay!!!!  Since I came back to NZ, I have been suffering from hay fever every single day....*sigh*  I am on medication right now, other than hay fever I am perfectly fit, alhamdullilah.

We have been back to NZ for almost 4 weeks now.  When we were in Singapore, Jannah lost almost 11kg :(  She doesn't want to eat much during the last 2 weeks of our stay there.  She sometimes vomit at the smell of food and even refused haagen daz ice cream ~ bizarre!!.  Alls well now, she was given antibiotics for her throat when I took her to the doctor after we came back.  Was told that she was suffering from a throat infection.  She's back to her healthy self now, alhamdullilah.  Her daily request for breakfast, lunch and dinner now is......roti kirai & curry & rice E.V.E.R.Y.D.A.Y.  Of course I don't make roti kirai everyday bcos I really couldn't be bothered to....hehehehez.  Otherwise, I have cooked curry at least 6 times & roti kirai twice for the last 3.5 weeks....yikesss.

Here's sharing the roti kirai recipe.  Warning, I used estimation method when I made the batter but this is how much ingredients that I used.

Ingredients :
  • 2 Cups Flour
  • 1 Egg
  • 1 Cup Milk
  • 2 Tblsp Oil
  • Salt
  • Enough Water
  • Yellow Food Colouring
Method :
  • Combine all the ingredients into a bowl and whisk till batter is smooth and not lumpy.
  • Note : Enough water must be added so batter can flow through the roti kirai mould freely.
  • Sift batter into another bowl.
  • Using the roti kirai mould, let batter flow onto a hot non stick pan creating a lacy pattern.
  • Best served with curry ;) 
Guess what Jannah wants to have for lunch & dinner today hmmmzzzz.  As above.......and I am seeing stars already!!!! Jeeezzzzz!!!

Salam, Kia Ora...

Happy Monday everyone ;)  I'm still on a mission to finish 2 more kumaras~~sweet potatoes that have sprouted roots.  The menu that I chosed today is curry puffs ahakks....but I only used 1 kumara :(  I still have 1 more left.  Haven't got a clue what I should do with it at this moment.

I supposed its just gonna be a short and sweet entry today as I haven't got much to report...hehehez.  Don't have to describe much how a curry puff should taste like, I'm sure everyone knows it.  I got the pastry recipe from As @ Teratak NurKasih.  Wonders why my curry puffs pastry didn't turned out as smooth as hers...hehehez??    Anyway, enjoy the recipe ;)

PS : I was watching the 6 o'clock news while posting this entry.  The headline today:  A young woman was found burned to death at the side of a road.  Her husband has fled to Fiji with their son on the day her body was found.  Haiiizzz how can a human have the heart to do that?  It must have been a painful death for her :( *tsk* *tsk*...




Ingredients for Fillings :
  • 3 medium sized potatoes
  • 1 sweet potato
  • 1 large onion
  • 3 cloves garlic
  • 2 inches ginger
  • Dried anchovies - a handful
  • Minced beef - a handful
  • 1.5 tblsp curry powder
  • 1/2 tsp turmeric powder
  • 2 sprigs curry leaves
  • Salt & pepper to taste
  • 2 tblsp canola oil
  • Water
Method :
  • Peel potatoes & sweet potato and cut into small cubes.  Boil in salt water till cooked.
  • Blend onion, garlic, ginger and anchovies until fine.
  • Heat oil in wok and stir fry the blended ingredients & curry leaves till fragrant.
  • Add curry & turmeric powder and a little bit of water to form a paste and fry further till fragrant.
  • Add minced beef and cover wok, stirring occasionally until beef are cooked.
  • Add boiled potatoes & sweet potato and stir until well incorporated.  Add salt & pepper. 
  • Simmer for abt 5 minutes and turn fire off.
  • Let filling cools down.

Ingredients for Pastry : (Makes 20 pcs)
  • 250g Standard Flour
  • 4 tblsp Hot Oil
  • A pinch of Salt
  • Water (Amount depends on flour)
Method :
  • Put flour in a large bowl.
  • Pour hot oil into flour and stir with a spoon as it is very hot.
  • Add salt to water and add water to flour little by little until a dough is formed.
  • Rest dough for 20 mins.
  • Roll our skin dough into 3 mm thick and cut into 4" round shape. Wrap up fillings and form into the shape of curry puff.
  • Seal the opening tightly and pleat it or you can seal it by using a fork.
  • Deep fry curry puffs in hot oil until golden brown.

Lempeng aka Malay Crepe

Salam, Kia Ora...

Everytime I try to start my 1st paragraph, I find it hard to find words and start composing.  I always said this is gonna be a short entry but after typing I realised that I'm already at my 3rd paragraph...hahahaz.  For me it's always hard to start but I dunno how I managed to tell grandma's story and managed to have a long winded entry instead..........

Talk abt grandma...hmmm my late grandma I should say.  When I was in primary school, I used to stay with my grandma during the school holidays.  I used to help her to pound chillies for sambal, stir her cooking and even fry fritters for our afternoon tea.  This is one of the comfort food that she used to make for me and my cuzzie for breakfast when we were there.  It's called lempeng, sort of like crepe but its usually eaten with spicy dishes like curries or sambal.  Best eaten with anchovies sambal....yummzz yummzz.

Anyway, I made beef curry for dinner last night.  As usual, when hb sees curry he wants roti as in Indian roti to accompany the dish.  Most of the times, I don't comply and we will just have the curry with rice.  Sometimes, I will buy ready made Indian roti from the supermarket...hehehez.  Last night, he asked for roti again and I decide to comply this time since he had a bad day at work.  Instead of making roti, I made him lempeng bcos I was lazy hehehez.  Its easier, I don't have to roll it with rolling pin and easy clean up :D

Still thinking if should bake a cake today.  Must watch my diet but my mouth been itching for a slice of cake after that RVC disaster....uuuwwwaaaa!!!!  It's so hard to resist temptation :(



Ingredients
  • 2 cups Standard Flour
  • 4 cups Water
  • 1 egg
  • Salt To Taste
  • A Few Drops of Yellow Food Colouring
Method
  • Combine all ingredients in a large bowl and stir using a whisk until batter is smooth and not lumpy.
  • Strain batter into another bowl.
  • Pour abt 2 ladles of batter in a fry pan and cook on medium heat till cook.  (Just like making pancakes)
  • Serve with curry or sambal.....enjoy ;)
