Red Velvet Cupcakes



Salam to all,

I really can't believe that its already Friday today.  It feels like the weekdays have gone too quickly this week.  Anyway, to everyone that has been waiting for this day to come, I wish u guys/gals a very happy weekend.  Yesterday, 1/3/2012 marks the first day of autumn here in NZ.  This year, it feels that summer never comes and suddenly its already autumn now.  Its been predicted that the weather will be crazy with gale force winds and heavy rain to hit the North Island - where we are at tonight/tomorrow. We are to expect power outages due to wind damage  :( Anyway, insyaAllah we will be fine.  Last year, a few houses got their roofs blown off and one local shop's glass panel was smashed to pieces due to very heavy wind.




Ok back to this cake.  Last year, I tried my hand at making a red velvet cake but I ended up giving them to the sheeps bcos it turned out to be a disaster ahaakkkss.  Only 2 old sheeps are left now in the paddock in front of  our house.  One has died and the little lambs have been slaughtered.  Not sure if there's gonna be any spring lambs born this year.  This time, I tried my luck at making these red velvet cupcakes since there was some cream cheese left from making the lemon pull apart bread and alhamdullilah they turned out good.  Only the cream cheese frosting were topsy turvy since I haven't got steady hands ahakkksss.  I made half of the recipes and got 11 cupcakes......supposed to be 12 if I didnt over filled them.

While setting up the table to photo this rvc, I have to go back to the kitchen to grab something that I've forgotten.  The next minute I heard one of the plank fell off the table :((  Haiizzz it was Jannah that knocked it down accidentally and came running to me.  I asked her what happened??  Her answer was "Takde apa2 lah....mama tak mo marah Jannah eh."  I asked her again what happened and she suddenly burst into tears.  I had a chuckle in my heart.  I didnt even growl her and she already started crying hahahaz.  Went back to my table and saw one of the plank was on the carpet together with 2 cupcakes.  Oh well, lucky it wasn't all of them on the floor otherwise.....no photos and no cupcakes for us!!!

Frosting From : Confections of a Foodie Bride

Ingredients: (I made half of the recipe)
For the cake:
2½ cups cake flour
1½ cups sugar
1 tsp. baking soda
1 tbsp. cocoa powder
1 tsp. salt
2 large eggs
1½ cups vegetable oil
1 cup buttermilk
2 tbsp. (1 oz.) liquid red food coloring
1 tsp. vanilla extract
1 tsp. distilled white vinegar

For the frosting:*8 oz. cream cheese
5 tbsp. unsalted butter, at room temperature
2 tsp. vanilla extract
2½ cups confectioners’ sugar, sifted

 



Directions:Preheat the oven to 350° F. Line cupcake pans with paper liners. In a medium bowl, combine the cake flour, sugar, baking soda, cocoa powder and salt; whisk to blend. In the bowl of an electric mixer, combine the eggs, vegetable oil, buttermilk, food coloring, vanilla and vinegar. Beat on medium speed until well blended.
Mix in the dry ingredients on low speed and beat until smooth, about 2 minutes.
Divide the batter evenly between the prepared liners.
Bake, rotating the pans halfway through baking, until a toothpick inserted in the center comes out clean, about 18 minutes.
Let cool in the pans 5-10 minutes, then transfer to a wire rack to cool completely.


To make the frosting, combine the cream cheese and butter in the bowl of an electric mixer. Beat on medium-high speed until well combined and smooth, about 2-3 minutes.
Mix in the vanilla extract.
Gradually beat in the confectioners’ sugar until totally incorporated, increase the speed and then beat until smooth.
Frost cooled cupcakes as desired.

Tu arh kan...tapi sumpah I tak paksa the kamben2 to makan. They came running to me bila dorang nampak the hehehez :)

Your RVC looks so sweet as sweet as anak dara sunti pakai baju raya warna pink...hehe..

My doter dah cuba 2x buat RVC. I suruh dia buat kapkek tapi dia buat one big cake "senang", katanya. Anytime I prefer kecik2 kiut cam you buat tu.

Tenkiu for ur kind compliments Cik Som ;) I sedang tersipu2 tersenyum malu mcm anak dara pakai baju pink hehehez.

Mmg betol ur daughter ckp its easier to make a whole cake....tapi whole cake ni takes up room dlm fridge and takes longer time to cook. Kapkek kiut and senang nak ngappp kan ;)

Kids are like that kan babe..masa budak2 tu kecik, samalah the dialogue tu kalau dia orang terbuat sumting...ahakss..that was then la..now, they own up real quicky..pasal dah kena training agaknya..better own up for whatever reason before singa ngan rambut kusut masai start mangaum sampai NZ kang bule dengar..so nowadays, I get to know 'stuff' real quick :)

so u made RVC again..as for me...ntah la..unless I try out that carael cake dulu baru I can try out this one a 2nd time..but yrs looked good though!

Jannah ni pun tak boleh percaya sgt. Kalau dia senyap aja for more than 15mins....I mesti tiptoe and check on her. Cfm ada aja benda yg tak boleh dibuat dia nak buat....haiizz.

Babe, biar arh rambut mcm singa asal masih lebat. Mine ni mcm kes kekuguguran rambut gitu ahakkksss. Tak sangka arh ur roar boleh sampai sini hehehez. I ingat I aja boleh marah pekik2 sampai sg boleh dgr :pppp

This rvc cake eh...kalau takde cream cheese, the cake just taste ordinary aja lah to me. Nothing to rave abt....but the caramel pudding cake, I nak buat lagi arh satu hari nanti babe. Lembut tak terkata....u shud try, u wont regret ;)

Sejak u citer ada oven meletops buat caramel cake tu yg I seriau arr nak try..tapi keinginan nak baham tu caramel cake amat la tinggi..maybe I shd wait for the next PH..which falls next month arr..gd friday ke apa ntah..sure eh babe, ok buat caramel cake tu? tak apa2 ka? si dudan no, 2 pun ada rengek2 sket wlpn dah tua bangka, tanya bila dpt makan cake tu..mudah2an I dapat buat jugak la..

Babe, bukan oven meletop lah. Tapi kek yg meletop dlm oven hehehez. Org yg buat tu tak bake the cake dlm WATER BATH!! Jadi, jgn lupa bake gunakan cara water bath ok. InsyaAllah takde apa2 lah babe. Dlm beribu2 blogger yg lain dah buat takde apa2 tak kan sbb sorang tu aja u patah semangat ke.

Really, seriously the cake is so soft....melts in ur mouth punya type. I dont know how to further compliment the cake sbb mmg sedap sgt sampai my friend yg I kasi the kek ckp dia teringat2 the cake sampai hari ni....hehehez ;)

I kasi u encouragement to buat the cake....nanti tak le merengek lagi ur baby tua. Urs sure kalerful one.....can't wait to see it.
