Fruit Crumble Cake

I made this fruit crumble cake yesterday and actually, I intend to post this entry yesterday also.  Don't know why I got tired and went to bed early instead...*yawnzzz* 

There were 4 apples that have been left untouched for more than a week and 2.5 unripe peaches...hehehez.  I was either gonna turn them into pies or crumbles but after I went blog walking yesterday....this was what I made instead.  I made a few minor adjustment to the fruit crumble topping and the result was an aromatic fruit crumble cake.  Hb poured some fresh cream when he had the cake while I prefer it as it is and Jannah doesn't like the fruit topping at all......hmmmzz ;)

Adapted from Technicolor Kitchen

3/4 cup/ 1.5 stick unsalted butter, softened
1 1/3 cups sugar (I only used 3/4 cups)
1 1/2 teaspoons vanilla extract
3 eggs
2 1/3 cups all purpose flour
2 teaspoons baking powder
pinch of salt
1/4 cup (60ml) whole milk
5 plums, stoned and thinly sliced (I used 4 snack size braeburn apples)
5 apricots, stoned and thinly sliced (I used 2.5 unripe peaches ;)
1 tbsp sugar - for sprinkling (I added 1 tsp cinnamon powder to the sugar)

Crumble topping:
1/3 cup all purpose flour
1 ½ tablespoons caster sugar
2 ½ tablespoons (35g) cold unsalted butter, chopped

Method :
1. Preheat the oven to 180°C/350°F. Butter an 8” x 12” (I used 8” x 8” so the cake turns out much thicker than her) baking pan and line with baking paper – butter the paper as well.
2. Place the butter, sugar and vanilla in the bowl of an electric mixer and beat until light and creamy. Gradually add the eggs and beat well. Sift the flour and baking powder over the mixture, add the milk and beat in low speed until combined. Spoon the mixture onto prepared pan, arrange the fruit over the top and sprinkle with the extra sugar.
3. To make the crumble topping, place the flour, sugar and butter in a bowl and rub with your fingertips until fine crumbs form. Scatter over the fruit.
4. Bake for 50 minutes or until cooked when tested with a skewer.

Look what I scored online yesterday *woot* *woot, yippieeee, happy, doing back flips LOL!!!  No wonder I was tired yesterday....tired from online shopping ~~nyehahahahz~~

BBQ Mussels & A Little Weekend Entertainment ;)

We had a family bbq yesterday, only the 3 of us.  By looking at the amount of food we have, people might be thinking that we must have invited some guests over....hehehez.  We can't finish all the food of course.  Hb took some to work for his lunch today and the rest was finished by me and Jannah :D

It was quite a windy afternoon yesterday and we had to bbq at the side of the house, instead of on the deck to block the wind.  Anyway, enjoy the photos ;)

Just gonna share an easy, peasy, japanesy, bbq mussels recipe.  You will need...
  • Live Fresh Mussels
  • Your choice of grated cheese (I used Edam)
  • Garlic paste
Clean mussels and shuck them open but do not remove from the shell.  Add a little garlic & grated cheese.  Close shell & bbq till cook.  Do not overcook them.

The chicken was marinated with store bought, Nando's Peri-Peri Sauce.  There's also beef patties, beef & chicken sausages & corns ;)

Should have listened to hubby when he said that the peaches are still not ready.  Did I listen?  Of course not......they weren't ripe, sour and hard....hahahaz :D

Our desserts......
Been wanting to have an ice blended drink for a long time.  There's no Starbucks in Te Awamutu and I've to settle for McCafe.  It was Saturday night, the queue was till outside the door, what a wrong time to go to McDonald's.  I wanted Mocha Frappe but it was sold out :(  Got me Choco Frappe instead and look what happened to my slippers LOL!!  Luckily, it happened after I walked out of McD and reached the car.  I have to walk on the pebbled driveway & walkway before getting into the house.  Ouccchiieee......it wasn't worth it...hehehez.

Mild Chicken Vindaloo

Salam, Kia Ora....

It has been hot and muggy these past few days.  The highs has only been in the range of 24 deg to 29 deg C but the afternoon sun is really, really hot.  It feels like a hot sauna whenever I'm inside the house.  It's ok outside bcos of the windy breeze but with the high UV warnings, I couldnt be bothered to stay outdoor.  If I were to leave the door open, there'll uninvited flying visitors coming  into the house.  Yes, I'm talking abt flies...yucks and its those nasty, big, green blow flies bcos of the sheep paddock just in front of our house.....yikkkeeesss

My mojo still hasn't come back to me...hhhmmmzz.  Haven't got any idea what to cook for dinner last night.  As I was sighing, pondering, wondering, thinking on what to cook, an idea light bulb suddenly pops out of no where and I managed to come out with this 'nonsensical' recipe.  I just grabbed anything and everything from the pantry and just dumped them into the wok....hehehez.  Please be warned that all ingredients are in estimation, I couldn't even be bothered to measure them ;).  Somehow or rather, the dish kinda remind me of vindaloo.....that's why I've decided to name it vindaloo.  I've never cooked vindaloo in my life, eaten it a couple of times.  So, this is vindaloo with my own twist :D

Ingredients :
  • 500 gm boneless chicken meat
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika powder
  • 1/2 tsp chilli powder
  • salt & pepper to taste
Clean and cut chicken into cubes and add the rest of ingredients.  Leave chicken to be marinated for at least 15 mins.

  • 1 medium onion sliced
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 tbsp tomato puree
  • 1 tbsp tomato sauce
  • 1 tsp chilli paste (Add more if u want it spicier)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 whole tomatoes diced
  • 2 potatoes cut into cubes
  • Enough water
  • Canola oil
  • 2 tsp sugar
  • salt & pepper to taste
  • 2 green chillies cut into halves.
  • coriander leaves
Method :
  1. Heat wok and add abt 2 tbsp of oil, sear ingredients (A) until half cooked.
  2. Remove from heat and put aside.
  3. In the same wok add another 2 tbsp of oil and saute onions, garlic & ginger until soft and fragrant.
  4. Add tomato puree, tomato sauce,chilli paste, cumin & coriander powder and fry all ingredients until well blended and fragrant.
  5. Add potatoes and enough water to cover potatoes.
  6. Cover wok until potatoes are half cooked.
  7. Add chicken, diced tomatoes and more water to cover the potatoes and chicken.
  8. Season with sugar, salt & pepper.
  9. Cover wok again until potatoes and chicken are cooked.
  10. Once cooked, add green chillies and let simmer on low fire until gravy thickens.
  11. Garnish with coriander leaves and serve with rice or Indian roti.

Donut Suria

These are the donuts that I made for Auntie Eton yesterday.  I like this donut recipe bcos its so easy to remember.  The donuts turn out so soft and airy and it still stays soft the next day.  Jannah is crazy abt donuts herself and she will only eat the plain ones, no sugar, no topping.  She had 6 donuts and kept coming up to me for more.......@_@

I lost my mojo today....it's 5.30pm and I still haven't got any idea what I am gonna cook for dinner.  Yikkkesss........indo mie goreng sounds yummmy for lazy days like this....kekekekez

Ingredients :
3 cups flour
3 tablespoons milk powder
3 tablespoons shortening
(I just use butter)

 3 tablespoons castor sugar

200ml lukewarm water
2 teaspoons instant dry yeast
20ml water ~ extra if needed

Method :
1. Mix well all the ingredients in B.
2. Pour into ingredients A and knead till smooth and shiny.
3. Roll to about 1/2 cm thick and cut with the donut cutter.
4. Leave to proof for about 1/2 hour.
5. Fry on medium heat till golden brown.
6. Coat with sugar.

I skipped step 1 and 2 and just dump all the ingredients into my breadmaker and let it do all the hard work....hehehez.  It was a cold morning to proof the donuts.  I proof them in a 50 degrees C oven.  It took only 15 mins for the dough to double in size.

As we couldn't stay long yesterday, my doggie bag consists of these 2 yummilicious snacks and a whole raw marinated chicken which I have to grill myself...hehehez

Righty ho, off to the kitchen now....Vampire Diaries on tv tonight.  Take care everyone.......

Condensed Milk Pound Cake

Last night, before I went off to bed....I was thinking if I should bake a cake or just make some donuts for today.  Auntie Eton whom migrated here 32 yrs ago, is very close to us and she is celebrating her 52nd birthday today.  She loves sugar donuts that's why I thought of  making some donuts for her today.

This morning while making the donuts, I thought to myself that maybe I should bake her a cake since its her birthday.  Auntie Eton is very health conscious....unlike me hahahaz.  Being a good cook and baker herself, she will never make a cake that calls for more than 3 eggs.  And she doesn't like chocolate......Hmmmzzz......so I thought this impromtu cake will be perfect for her.  I didn't tell her that I used 5 eggs thou :pppppp nyehahahahaz *evil laughter*  sssshhhh.  At the same time, I wont have any trouble transporting the cake as I don't have to worry abt smudging the cream or ganache.  

Dropped the donuts and cake to Aunty Eton's house on my way home, after I finished my grocery shopping.  I didn't stay long as it was abt 3pm when I reached her place.  I need to make my way home.  Jannah was whinging bcos she was getting tired.  The journey home took us 50 mins and Jannah fell asleep in the car.

I didn't get to taste the cake or even see the texture of the cake, only free smell of condensed milk wafting frm the oven....yuuummmzzz.  You can take a peek of the yummilicious cake texture at Rima's (Baking Queen) or Yat's (Queen of Jlo) blog.

240g good quality butter
90g sugar - I did not add
1/2 tsp salt
1 cup (304g) condensed milk
3 tsp vanilla paste
240g cake flour
1 1/2 tsp baking powder - I added 2tsp
4 large eggs - I used 5 no.6 eggs

- Sift cake flour and baking powder together. Set aside.
- Cream butter and sugar together till light and fluffy.
- Add in salt and vanilla paste and cream well.
- Pour in condensed milk and cream till well combined.
- Using the mixer on low speed, add in flour in 3 additions. Mix till batter is smooth.
- Add in eggs one at a time. Make sure it's well mixed and smooth.
- Bake at 175 degrees for 1 hour - I baked mine at 160 degrees for 1 hour

Going to sleep now...very, very tired.  Will post on the donuts and visit everyone tomorrow ;), InsyaAllah.....

Update on the Pike River Mine :  There was a 2nd explosion reported today.  All family members have been told that all the miners are dead as no one could have survived the explosion.  PM, John Key, has announced 'We are a nation in mourning'........

I've never eaten or heard of Shabsuka....tks to 'pest' book....hahahaz.  Got a few friends that were promoting and showing photos of this mouth watering yet unusual dish to me and I was tempted by it ;p.  This is the 2nd time that I made this dish.  Hb really liked it and gave his thumbs up when I first made it and he did say that he will look forward to having this dish again.

Today, hb invited one of his work mate, Pat, over to our home for dinner & watch cricket (yeah that boring sport).  I wonder how ppl can watch a cricket test and not get bored of it.  At first, I couldn't understand how they can score 500+ points for a game.  I know now that some test takes 2 days to finish.  I don't mind watching a 20/20 game....but not a 50/50 or a test....bbbbbboooooorrrrinnnnggg *yawnzz* hehehez

Decided to make shabsuka for dinner tonight...didnt make it too spicy as I don't want Pat to be on fire.  It was a 4 thumbs up dish, 2 frm Pat and 2 frm hb.  I suka...u suka, shabsuka!!!  hooorrreeey.....

Ingredients :
  • 500gm beef mince (clean and drained)
  • 4 tbsp chilli paste (add more if u like it spicier)
  • 2 tbsp ginger paste
  • 3 tbsp garlic paste
  • 3 tbsp tomato puree
  • 4  tbsp tomato sauce
  • 2 tbsp chilli sauce
  • 2 tbsp cumin powder
  • 1 tsp black pepper powder
  • 4 onions - sliced and fry till soft
  • 2 tomatoes - diced
  • 1/2 cup fried shallots*
  • coriander leaves* chopped (or substitute with chinese celery and spring onion)
  • 1 red & green chilli each (I did not add)
  • salt & sugar to taste
  • 3 -4 eggs (I used 5 ;p)
  • Enough canola oil or ghee for sauteing
Directions :
  • Heat oil in a wok and saute the chilli, ginger and garlic paste till fragrant.
  • Add beef mince and stir until mince has changed in colour.
  • Add all the sauces, onions, cumin and black pepper powder.
  • Stir until well incorporated then add salt & sugar to taste.
  • Add in half of the ingredients that are marked (*) & diced tomatoes.
  • Turn fire off once mince is fully cooked.  Dish should not be too dry, add some water if its dry.
  • Preheat oven to 180 deg C.
  • Place the cooked beef mince in a heat proof container.
  • Garnish with the rest of the ingredients that are marked (*)  and chillies.
  • Dig 'holes' in the cooked mince for the eggs.  Making sure that they are not too closed together.
  • Bake for 15 mins or until eggs are cooked.
  • Serve with pita breads or any bread that u fancy or rice.....
My thoughts and prayers are with all the family members of the 29 miners that are still trapped after the Pike River Mine, Greymouth-NZ, explosion almost 5 days ago.  There is still no contact as it is unsafe to launch a rescue mission.  A robot was deployed but it malfunctioned half way while digging a tunnel today.  As time passes by, the chances of survival is very, very slim. 

To all the miners, families, friends and rescue workers : Kia kaha, kia tau te rangimarie... Stay strong, may peace prevail.  It is a very, very sad event....my tears were rolling when I watched the news & live updates. (strett, strett....so sad)

Feather Light CheeseCake

I wondered why I bought a bottle of fresh cream last week??  It's gonna expire on 28th Nov.....before it turns into yoghurt, (will it?? hehehez) I thought I should look up for a recipe that will also use the other half block of cream cheese, left over from making the Devil's Food Cake.  I found this recipe while I was blog walking.  Thank you Wendy for sharing the recipe.  This cake was really delicious, just like eating a Japanese Cotton CheeseCake.....yummy ;p.  Hhhmmzzz, let me see when did I last have that.....almost 8 yrs ago I supposed...hehehez

Just wondering why is this cake a shortie?  Is it supposed to rise??  Is it because my pan was too big...my pan was 8.2 inches and it is recommended to use an 8 inches pan.  Is it because I substituted milk to fresh cream or is it bcos I over mixed the egg whites mixture?? Hmmmmzzz 'too long', 'too long' help, help.....need advise from baking gurus out there :D thank you.....

This cake tastes more yummier when it's chilled :p

Feather Light Cheesecake Recipe

250gm milk (I used 230gm fresh cream)
20gm butter
125gm cream cheese (room temperature)
50gm flour
3 egg yolks
1 tsp vanilla extract
3 egg whites
1/8 tsp cream of tartar
80gm sugar

Pinch of salt
½ Tbsp cocoa powder
1 Tbsp boiling water

1. Line the base of a 8 inch square pan and preheat the oven at 150/160C.
2. In a medium sized bowl, cream cream cheese until smooth.
3. Bring milk and butter to a boil and pour ¼ of it into cream cheese and gently stir until incorporated. Pour in another ¼ the milk and stir again. Lastly pour in all the milk and stir until smooth. (At this point, prepare some boiling water)
4. Let the cheese mixture cool down and put in flour. Mix until smooth. Then put in egg yolks and vanilla. Mix until smooth.
5. In another clean bowl, beat egg whites until frothy. Put in salt and cream of tartar and beat until soft peaks. Put in sugar gradually and beat until stiff.
6. Put 1/3 of egg whites into cheese mixture and fold gently but quickly.
7. Pour the cheese mixture into the egg whites and fold until well incorporated.
8. Mix cocoa powder with boiling water until smooth. Put in a few tablespoons of the cheese batter and mix until a smooth chocolatey batter is formed.
9. Pour main cheese batter into prepared pan. Drizzle chocolate batter over main cheese batter.
10. Use a knife and cut through the batter to create a marbling effect.
11. Put pan into slightly bigger but shallower pan. Fill the bigger pan with boiling water until halfway up and bake for 50-60 minutes.
12. When cake is baked, remove from oven and release the sides of the cake from the pan immediately by running a knife between the sides of the cake and the pan. Leave it to cool down totally and chill until cold before cutting.

Please note that this cake is very fragile and must be handled very gently with much care.

Wonders why NZ's salted duck egg yolk isn't orange in colour??

Salam, Kia Ora,

I would like to thank all the visitors, whom are willing to spare some of your precious time to visit and read my blog.  Before I started blogging, I always have this thinking that no one will visit a newbie's blog.  There seems to be a million blogs that are established out there....Alhamdullilah, thank God ;)  Suddenly, I remember the show 'Ugly Betty'....One day, Betty decided to start blogging. Only after a long period of time, then she received one reader and that reader was her boss, Daniel...hehehez :D

I made an easy lunch cum dinner for me and Jannah today.  Bought a bag of spinach for the pizza yesterday and there is still some leftover.  I was quite surprise that Jannah ate the spinach :) wweeeiiiihhhhooooo.  Jannah is a picky eater when it comes to veggie, she will only eat carrots, potatoes & cabbages. 

At first she doesn't want it....keeps on saying "yucksie yuksie Jannah tak nak sayur lah."  She changed her mind and ate it after I said, "sedapnya sayur colour hijau, sama macam Ben10 kan.  Kalau Jannah makan sayur hijau, Jannah sama macam Ben10 ok."  Yikkkesss, after that sentence she ate it without any whinging....pheewww my plan works :D  For my non Malay readers, please use the google translator gadget....hehehez

Spinach and Prawn Soup
Ingredients :
  • 2 cloves garlic
  • 1 shallot or half a medium onion
  • 1/2 tbsp canola oil
  • 12 fresh prawns
  • 2 stalks spinach (I only use the leaves, as I wasn't sure if the stem will be fibrous)
  • Enough water
  • Salt & pepper to taste
Directions :
  • Pound garlic and shallot or u can chopped them finely.
  • Heat oil in a pot and saute the garlic and shallot till fragrant.
  • Add prawns and a dash of pepper.
  • Once prawns is half cooked, remove from the pot.
  • Add water and let it boil.
  • Add prawns again, season with salt and pepper and let soup boil.
  • Turn fire off and add spinach.

Sambal Lonte (A version of Indonesian Sambal Belacan)
Ingredients :

  • Abt 10-12 green chillies or u can use birds eye chillies or red chillies.  Just have more green chillies than red so that the sambal colour will be darker.
  • 1 clove garlic
  • 2 shallots or 1 medium onion
  • 3 tsp toasted shrimp paste (belacan)
  • 1 tbsp canola oil
  • Salt if required
Note : You can also add fried anchovies or left over fried fish in the sambal and lessen the amount of belacan.  I didn't add them bcos I couldn't be bothered to fry anchovies and I didn't have any left over fish.

Directions :

  • Slice chillies into half, length wise. (To avoid 'explosion' while frying them :D)
  • Slice garlic and shallots.
  • Heat oil in pan and fry all the above ingredient until they are soft and caramelised.
  • Pound all the ingredients with a mortar and pestle or u can use a blender.  Don't forget to add the belacan and anchovies or fried fish. Do not over pound or over blend. 
  • Season with salt if required.

Hb is not into our kinda food.  He requested something simple for dinner.  American hot dogs with spicy seasoned chips :)  I'm sure the rice, soup & sambal look more tantalising and mouth watering....hehehez :D

How is everyone today?  Its the weekend again tomorrow :)  The week has gone by so quickly...hhhmmzzz.  Every week, I'm always so looking forward to these two days i.e Thursdays & Fridays.  Why??.....ahem, ahem.....no, not bcos of that :D hahahaz.  It's bcos Thursday is the only day that I watch tv.  As for Friday, my usual activity will be : 'patiently' waiting for my series that I'm watching to be uploaded on the net.  Yes!!! It's The Vampire Diaries.................Currently watching Season 2 episode 9.  I thought that episode 10 will be uploaded today but.........NO!! VD is having a break till 2/12/2010!!!  Arrrggghhhhhh so frustrating!!!

I'm so in love with Vampire Diaries....hahahaz.  In fact I'll watch anything that involves witches and warlocks.  Charmed used to be my favourite TV series.  For now its VD, Ian Somerhalder, Paul Wesley, Nina Dobrev....I love u guys ;)  2 handsome vampires on tv......drrooollzzz....hahahaz what can I say. VD is shown on tv every Thursday, after that I will watch 20/20 (current affairs) & Project Runway.

Once when I was watching VD on tv, hb asked me "I tot you've already seen all the episodes??"  My reply is "It's different watching the series on tv, its so much clearer" hahahaz.....what a lie :pp I just wanna watch it over and over again actually.

Anyway, I don't have any idea what to cook for dinner.  Open up the fridge and saw the 1kg block of colby cheese...packaging opened and abt 3/4 left.  Thought to myself, that I better use it before it turns into magic mushrooms....hahahaz.  I was told that I can grate the cheese and freeze it to prolong the shelf life, but I just couldn't be bothered to do it.  Lazy is the word.........:D

BAHAN-BAHAN DOH PIZZA :-) Ingredients for Pizza Dough.
300 g tepung gandum ~ 300g Standard Flour
6 g instat yeast ~ Do I need to translate this?? LOL :D
20 g mentega ~ 20g Butter
10 g gula halus ~ 10g Caster Sugar
1 camca teh bread improver (optional) ~ 1tsp Bread Improver (Optional)
1/4 camca teh garam ~ 1/4tsp Salt
1 1/2 camca besar madu ~ 1.5tbsp Honey
170 ml air ~ 170ml Water
Sedikit tepung untuk ditabur ~ Flour for dusting

  1. UNTUK DOH PIZZA :- Satukan semua bahan untuk doh dalam satu bekas, kecuali mentega dan tepung untuk ditabur, gaul rata hingga bersatu. Tambah mentega dan terus meggaul hingga menjadi doh yang kenyal, jika melekit, tambah sedikit tepung. Kemudian bulat2kan dan biar 45 minit hingga naik sekali ganda.
  2. KAEDAH LAIN :- Masukkan semua bahan untuk dok kecuali tepung untuk ditabur, ke dalam bread maker, pilih setting untuk doh dan tekan "ON", buat hingga siap.
  3. Panaskan oven pada suhu 190C, sediakan 2 dulang pizza berukuran 9 inci, sapu dengan sedikit mentega.
  4. Ketepikan. Keluarkan doh, bahagikan doh tadi kepada 2 bahagian sama besar.
  5. Ambil satu, tabur sedikit tepung dan canai bulat.
  6. Alihkan ke dalam dulang pizza, tekan2 dengan hujung jari hingga memenuhi dulang tadi dan biarkan kelilingnya sedikit tebal (macam dalam gambar no1).
  7. Ratakan sebahagian sos pizza tadi dan susun bahan untuk pizza atasnya (buat 2 bahagian) dan diakhiri dengan keju mozzarella.
  8. Bakar 20 - 25 minit hingga keju mencair dan roti kelihatan kuning keemasan. Keluarkan dari oven dan hidangkan segera bersama sos kegemaran. Buat kaedah sama juga untuk yang selebihnya.
Method :
  1. Combine all ingredients for the dough in a container, except for the butter and flour that will be used for dusting and mix well. Add butter and continue to knead until dough becomes elastic, if its sticky, add some flour. Then shape it into a ball and let the dough rise for 45 minutes or until doubled in size.
  2. Bread Maker - Put all the ingredients into the bread maker except for the flour that will used for dusting, select the dough only setting and press "ON" and let the bread maker do the hard work for u :)
  3. Preheat the oven to 190C, prepare two 9 inch size pizza pans, rub with a little butter. Set aside.
  4. Remove the dough from the bread maker and divide into 2 equal parts.
  5. Take one, sprinkle a little flour and roll dough into a round shape.
  6. Put dough on the pizza pan and flatten dough with finger tips so that it fills the pan.  Dough edges should be a little thicker.
  7. Spread some pizza sauce and arrange the ingredients on the dough and end with mozzarella cheese.
  8.  Bake 20-25 minutes or until cheese melts and the dough looks golden. Remove from oven and serve immediately with your favourite sauce.

I used the Bread Maker method and created these 2 pizzas ;) Hb's comment was : The best gourmet pizza he ever had....the crust was really, really soft.

Eidul Adha Mubarak...

Salam, Kia Ora......

I prepared a few simple dishes last nite for Eidul Adha's celebration.  We haven't got anything planned for today, might just relax.  There are still some left over, enough, for tonight's dinner......that means I don't have to cook tonight.  Yippppiiieee!!!!  Public holiday for family & friends in SG & MY, but not in NZ....hehehez.  Hope everyone will be having a great time today and enjoying, savouring, eating the yummilicous Eid food......drrrooolllzzz :p

Anyway, gonna keep my rambling short today as I've a long list of recipe to share.....hehehez

Biryani Rice
Ingredients :
  • 2 cups basmathi rice washed and drained
  • 2 cups water or measure the water accordingly to the rice needs
  • 3/4 cup fresh milk or evaporated milk
  • 2 tbsp ghee or butter
  • 2 cloves garlic chopped finely
  • 1 inch of ginger bruised
  • 1 medium onion thinly sliced
  • 1 stalk lemon grass bruised
  • 2 pieces of pandan leaves tie to a knot
  • 2 fresh tomatoes chopped to small pieces
  • 1 packet of Shan Biryani Masala Mix or substitute with abt 3 tbsp any biryani mix
  • 1 stick cinnamon, 3 cloves, 1 star aniseed & 3 cardamons (not required if you are using Shan's mix as its included in the mix)
  • Salt if required.
  • Abt 1/4 tsp of tandoori red food colouring diluted in 2 tsp of water.
Garnishing :
  • Roasted cashews
  • Sultanas
  • Fried shallots
  • Coriander leaves

  • Heat ghee/butter in a pot or rice cooker (I did mine in a rice cooker)
  • Add garlic, ginger, onion, lemon grass, pandan leaves and saute till soft & fragrant.
  • Add chopped tomatoes and cook till all the ingredients turned into a paste.
  • Add biryani mix and stir till well incorporated.
  • Add rice, water,  milk and salt (if required) stir well.  FYI Shan's mix contains salt.
  • When rice is 3/4 done, gently 'dig a hole' in 2 different spots and pour in half of the tandoori colouring in each hole.
  • Cover the holes with rice but do not stir the rice.
  • When rice is done, gently fluff rice with a fork to avoid breaking the morsels.
  • Garnish and serve.

Masala Fried Chicken
  • 10 chicken drumsticks or approx 1.5kg of chicken
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp chilli powder
  • 1/4 tsp tandoori red food colouring
  • 1/2 cup white rice flour
  • salt & pepper to taste
  • Enough canola oil for deep frying
Directions :
  • Clean chicken and drain excess water.
  • Place chicken in a container and add all the ingredients above.
  • Mix well and leave chicken marinated for at least half an hour.
  • Heat oil in a wok and deep fry chicken till cook.
  • Place cooked chicken on paper towels to drain excess oil.

Spiced Pineapple
Ingredients :
  • 1 whole pineapple skin and middle core removed and cut into pieces.
  • Or use the sliced/rings canned pineapples and cut into fours.  Just make sure you use the good quality brand like Dole or Golden Circle as the cuts are thicker.  Do not drain away the juices.
  • 1/4 cup water if using fresh pineapple or use all the canned pineapple juice.
  • 1 stick cinnamon
  • 1 star anise
  • 2 cardamons
  • 3 cloves
  • 2 cloves garlic
  • 2 shallots or half medium onion
  • 3 green chillies or red or u can add any amount u desired
  • 1/2 tsp turmeric powder
  • 1/4 tsp chilli powder
  • Enough canola oil for sauteing
  • Sugar and salt to taste
  • In a pot, heat canola oil.
  • Add cinnamon, star anise, cardamon, cloves, garlic and onion and fry till fragrant.
  • Add turmeric & chilli powder and give it a quick stir.
  • Add the juice of the canned pineapples or water.
  • Once juice or water boiled, add pineapple.
  • Cook pineapples until it absorbs the turmeric colour.
  • Add chillies, sugar and salt.
  • Simmer for abt 3 - 5 more mins and turn fire off.
